Lately I have been trying to eat healthier and cook more. When I work 10 hours shifts, often 4 or more days in a row, it's important to meal prep as they call it. The other day, veggies sounded so good so I went to the store, bought a bunch of veggies, chicken, and cheese, and made a delicious veggie-chicken bake. It extremely easy to make although it did take awhile to cut up all of the food. It was really fun to make and I ate a lot along the way. I had a tummy ache after but I think it could be worse than to get a stomach ache from eating too many veggies!
First I cut all of the veggies up to cook.
I baked the squash, cucumber and red peppers in the oven with a little olive oil.
I grilled the chicken, spinach, and mushrooms in a pan while the other veggies cooked.
I made WAY too much because my eyes are always bigger at the store so I had to break them up and put them in different containers. When I brought it for lunch I took a little from each!
It was super healthy and delicious and most important extremely easy to make.
