Yesterday I made pumpkin spice cupcakes for work. As part of our rotation every 4 weeks we have to give a case presentation on one of our more tricky patients. Two classmates and I are presenting today. One of my classmates (Caelon; pronounced Kellen *cool way to spell it, huh?*) went to Peru to study abroad this summer. In addition to our case conferences, he is going to present on Peru!
I made the cupcakes and frosting from scratch following Anna Saccone's video/recipe!

The only difference is I didn't have pecans to make the toppings. I thought it was interesting in the UK pumpkin spice and canned pumpkin is hard to come by. In the US, they are super easy to get. In fact, we had both of them already on hand at home. I didn't have to run to the store for anything
Pumpkin Spice Cupcakes with Cream Cheese Frosting Halloween themed cupcake liners. I think I bought these at either Target or Michaels, which are my go to places for all things baking.
The baking process. I wore this adorable little apron and good thing I did! For some reason I tend to get ingredients all over the place while I am baking.. that’s part of the process, right?! Also if you are wondering I took this picture with my camera, tripod, and self-timer/remote.
Almost done! This was my first time really trying to take photos of the whole baking process including myself so it was a bit of a learning process. Food photography is always so beautiful but it’s so hard to make it pretty. You have to have the perfect lighting and backdrop. My parents have dark green counters so it’s hard to make the photos pretty!
Did some dishes while I was waiting for the cupcakes to bake and cool. I like to hand wash some of the bigger items to avoid them taking up so much room in the dishwasher. If I put them in, I basically need to run it right away which I feel is a waste.
I’d love to hear if you made these and what you thought! Comment below and even better snap a picture and share it with me!
